Roasted vegetables

A very good way to use whatever vegetables you have lying around.

Cooking time: 40 minutes
Ingredients: vegetables that you want roasted, kalamata olives and feta or mozarella (optional)
  • Preheat oven to 425
  • Chop vegetables
  • In a baking dish, add vegetables that take 40 minutes (e.g. onions, potatoes, garlic cloves) and toss with enough olive oil to lightly coat and a small amount of lemon juice (~1 Tb)
  • Stir every 10 minutes
  • After 20 minutes, add vegetables that take 20 minutes (e.g. green peppers, zucchini)
  • After another 10 minutes, mix in tomatoes and pitted kalamata olives. Top with crumbled feta and cook a final 10 minutes
