Salsa verde

We made 2 1/4 quarts of salsa verde using tomatillos from our garden. The tomatillos fortunately survived the late blight that demolished our tomato crop.

The salsa consists of roasted tomatillos, salt, raw onion, and hot peppers. Grind them in the blender and enjoy.

A word of advice to anyone thinking of growing tomatillos: the plants are self-sterile. One plant will produce abundant flowers but no fruit. You need two plants. We learned this lesson last year. Tomatillos grow like a weed, even this far north.
